By working directly with farm cooperatives we ensure every Waves coffee farmer is paid more than they would thru Fair Trade. Where as Fair Trade doesn't have quality standards associated with a set price, our farm direct relationships are based on industry leading quality standards.
We have developed our own unique scoring systems that give more emphasis on the taste categories that our customer's value as most important. The ability to consistently score coffee is not something that comes naturally to people. It requires a real commitment to not only cupping daily, but also cupping a large variety of coffee.
So what is the perfect tasting coffee? How is it roasted? How is it brewed? What taste attributes does it have? Coffee is quite possibly the most complex tasting beverage that we drink. With more potential flavor combinations than wine, defining the perfect cup is impossible. Human preferences and taste perceptions will not allow us to pinpoint what is involved in creating the ideal taste. But there are steps we can take to quantify the attributes of coffee.
As coffee professionals, it is Waves' obligation to understand the range of coffees grown around the world. As the specialty coffee industry evolves, being able to clearly define what you are looking for in coffee from different countries is becoming more important than ever. The quantity of high quality beans cannot keep up with the increase in demand from consumers who crave great tasting coffee.
